I LOVE peanut butter, chocolate and coconut. I know oats keep me full for longer, so I went hunting for some AMAZING no bake energy protein bites with these ingredients. I have scoured the internet for the best recipes and tried many different options however, this is by far my favourite. I hope with this post your search is over too!
Thanks to GIMME some OVEN, I made these DELICIOUS no bake energy balls in advance for my week. No bake for me means easy peasy and I like it! These babies can stay in the refrigerator for up to 1 week, they take 10 minutes to put together and make you 21-25 snacks. At an estimated 126 calories per each ball you can’t go wrong.
1 cup dry old fashioned oats
⅔ cup toasted coconut flakes
½ cup peanut butter (don't be afraid to put more if the bites do not stick)
½ cup ground flax seeds
½ cup semisweet chocolate chips
⅓ cup honey or agave nectar
1 tbsp chia seeds (optional)
1 tsp vanilla extract
Mix everything together, let sit in the refrigerator for 30 minutes before rolling into mini balls. Seal in closed packed container and refrigerate for up to 1 week.
