Banana Ice cream
I'm SO over the snow and cold this season. If you are too, I have some tips for fighting the winter blues... Turn up the heating, lay out a towel, put on your shades and lay back with a delicious bowl of no added sugar, gluten free, dairy free, guilt free, soft serve ice cream. It won't affect your bikini body and is a great way to avoid wasting bananas. Its so healthy that it's another great kid bribe (a repetitive trend with my recipes) Ice cream for breakfast is a great incentive to go to bed without messing around!
Peel 2-3 ripe bananas, cut each one into 4 pieces, cover and freeze overnight.
Once frozen, place the bananas in a blender.
Blend until the consistency is similar to soft serve ice cream. If you are having any problems blending you can add a 1/4 cup of coconut milk or water.
You can either serve immediately or return it to the freezer for 30 minutes if you prefer a firmer texture.
There are obviously lots of variations for flavour combinations but here are some of my favourite healthier additions for your ice-cream:
BERRY HEALTHY
Add 1 cup of frozen fruit and 1/4 cup of coconut milk.
BANUTTER
Add 2 tbsp of peanut butter.
MINT CHOC (NOT ON YOUR) HIPS!
Add 3 tbsp cocoa powder and 1/8 tsp of peppermint extract.
CINNABON
1/4 unsweetened apple sauce. 1/4 teaspoon cinnamon. 1/4 cup raisins.
PROTEIN DREAM
Add one scoop of your favourite protein powder.
RUM RAISIN
For a naughtier option, leave 1/4 cup of raisins to soak in 1/3 cup of rum overnight. Drain then add stir into blended bananas.
Makes 1-2 servings.
