The ooey gooey guilt free “cookie” recipe

No flour. No artificial sugars. So what’s the secret? Chickpeas. “WHAT!?!?! EW!!!” is my most common reaction when I tell people about my favourite guilt free dessert recipe.

Now don’t turn your face up just yet. Give me a chance to explain. This is a simple and easy dessert alternative that won’t compromise your healthy eating in those weak moments we all have where reaching for the sugar is just too easy. I’ve been playing around and testing this recipe for a while now and I think it is finally ready to be shared.

guilt free "cookies"

Ingredients:

1 can of chickpeas (cleaned/dried)

1 tsp baking powder

½ cup peanut butter or nut butter of choice

1 ripe banana

¼ cup of dark chocolate chips

1-2 scoops vanilla protein powder

Instructions:

Preheat oven to 350͒ F. Place all ingredients in a food processor except for chocolate chips. Process until smooth. (The batter will be thinner than regular cookie dough) If the batter is too sticky add an additional scoop of protein powder. Fold in chocolate chips. With an ice cream scooper, scoop batter onto a lined baking sheet. Since the batter won’t do much rising, flatten dough with a fork to give the resemblance of regular cookies. Bake for 10-12 minutes. Let cookies cool before handling. Freeze cookies for up to 2 weeks.

*Tip for serving: Microwave from frozen for about 30-40 seconds and they will taste like warm freshly baked gooey cookies each and every time. Promise ;)
