Pancakes

My children wake up most mornings requesting pancakes for breakfast. Its a great bargaining chip for me as the days I give in they think they're getting a treat but its actually a quick and easy recipe containing less sugar than most cereals. (unless you choose the chocolate chip option!) They can be adapted based on whatever is available in your kitchen on the day and provide an easy breakfast to eat on the go.

(Makes around 15 small pancakes.)

1 cup of flour

1 cup of milk

1 egg

Whisk together then add your flavour.

Some of my favourites are...

* 1/2 cup of blueberries.

* 1 Mashed banana and a tbsp of peanut butter.

* 1 Mashed banana and 1/4 cup of chocolate chips.

* A chopped apple and 1/4 cup of raisins.

Heat a pancake pan to a medium heat then spoon small amounts of the mixture, leaving enough space between them to flip. Cook for roughly 90 seconds each side. Leave to cool for a couple of minutes before serving.

These are best eaten fresh but if you want to save them for later make sure they are completely cooled before storing.
